We are sat at the iconic corner table. The sun streams through the waist to ceiling palatial windows and we are bathed in glorious light with a surprisingly lovely coolness and clarity. From our first-floor window the traffic weaves its way below us, through the jaunty intersection of Victoria Street and Manners Street. The buildings are suitably dense, filled with independent retailers and offices. One has a wonderful metropolitan-oasis feeling. The bustling city right in front of our eyes, but cool serenity within.</p>

The building itself was &#8211; as the name suggests &#8211; a boot factory in the art deco era. The space lends itself perfectly to Clay’s concept of a bistro and oyster bar. Clay tells us that it has been eleven years now, establishing WBC in 2013. I tell Clay that in Indian culture, eleven is a very auspicious number.</p>
<p>Conversation flows easily. We decide to mix it up and share plates of Lamb T-bone steaks and duck leg massaman &#8211; Glorious. It doesn’t take long for us to start waxing lyrical about Great Burgundy. Laughter and smiles ensue. I am with the Dhall and Nash gang from the Wellington office. The food, wine and ambience are so good that we splash out a little. As I pay the bill I see I’ve popped over budget slightly. Clay laughs. “You&#8217;ve been WBC’ed” he booms. Indeed we had. Happy eleven years to WBC. Here&#8217;s to another eleven years and more of being happily “WBC’ed”</p>

<p>When it comes to hospitality, K’ Road has always been ‘chic’. Every operator has their own unique style and offering, and between all the operators there is a genuine feeling of collective good will towards each other – a true community.</p>
<p>At Atelier on K’ Road, owners Matt Gossett, Julian Albe and Kelian Monteil have brought French modern chic to our doorstep. Kelian, the chef, hails from Montpellier and for many years specialised in patisserie in some of the best restaurants in the region including the iconic Lido in Corsica, a Michelin restaurant perched on a rock with magnificent views to sea and a new menu daily.</p>

<div class="uncode_text_column" ><p>The team strives to bring out classic French dishes, but with their own unconventional and delicious twist in a modern, convivial and shared-plate setting. The result is magnificent. Kelian presents to me his latest creation, chicken cordon bleu with mushroom ketchup and creamy dill sauce. The chicken breast is cut ‘portefeuille’ (French term for ‘opening the wallet&#8217;) making it flat and long. This is then rolled with the raclette cheese and cooked sous vide for one hour and then deep fried with a slight crumb.</p>
<p>Finally, the dish is garnished with the creamy dill sauce and the most incredible mushroom ketchup. I spoke about attention to detail while looking effortless, and this completely fits the bill. Thirty ingredients go into this ketchup, including five mushrooms – oyster, button, shitake, portobello and enoki, then a number of Asian sauces and light spices. Chef tinkered for weeks to find the perfect blend merely for this garnish, in an eternal search for beauty, deliciousness, umami, style – ’chic’.</p>

<div class="uncode_text_column" ><p>And so for the wine match, I turn to the enigmatic Easthope Family Winegrowers from Hawke’s Bay and their 2021 chenin blanc. I love the pairing. The chenin is grown around the alluvial basalts of the Tuki Tuki River giving the wine vibrancy, beautiful texture and length. This strikes well against the powerful raclette cheese. The tropical fruit notes with slight mealiness of the wine also contrasts beautifully with the mushroom, spice, cream and dill of the dish.</p>
<p>From the team that brought you beef bourguignon in a croquette and eclair with black pudding, it just goes to show that a sprinkling of the ‘old’ with a dash of the ‘new’, mixing up the savoury where once there was sweet, leads us to new and delightful places. It is only with an open, knowledgeable, curious and free mind that we can achieve the heady heights of being ‘trés chic’.</p>

</div><div class="uncode_text_column blog-blogquote" ><p>The experience is like being truly inside the music of Vivaldi’s Four Seasons, gently whirled and whizzed in violins and cellos, twirled through English country gardens, the scent of roses and herbs permeating the air, the red clay earth at your feet.</p>
<p>I am sharing a glass with Adrian Still, the head chef at Petersham. The restaurant is one of the first to receive the Michelin Green Star award for sheer excellence and sustainability.</p>
<p>Adrian informs me that the owners, Francesco and Gael Boglione, bought the nursery and house 24 years ago. Since then they have grown this hamlet into a veritable utopia of nurseries and gardens surrounding various forms of natural eateries including this incredible restaurant. Around 10 years ago, The Bogliones brought in Chef Skye Gyngell.</p>
<p>It was at Petersham that Skye became renowned for her distinctively seasonal, elegant cooking, creating dishes inspired by what she saw growing and blossoming around her. Adrian tells me that it is simplicity and sustainability that is the key driver. He, himself, has been bestowed the head chef mantle just this year. He seamlessly combines fine Italian cuisine with middle-England pub grub, a sprinkle of his Grandma and Ma’s cooking and a touch of the Orient, and it is fabulous.</p>

<div class="uncode_text_column blog-blogquote" ><p>We open a bottle of the Digby Non Vintage Brut Reserve. I take a swig. The wine is exceptional. To be honest with you, it blows pretty much all of the coterie of corporatised Grand Marque Champagnes (you know the ones) out of the water. The green sands of Kent are producing incredible pinot noir and the chalk and limestone soils of Sussex lend themselves perfectly to chardonnay. This stuff is the real deal, and I’m a man not easily swayed from my Billecart-Salmon Brut Reserve.</p>
<p>Chef offers me a borage and courgette flower fritti – oh my gosh, the sun fills the room as I enjoy the pairing. I feel like I have grown gumboots on my feet and am inside nature itself. Chef tells me how patient you must be in the gardens to harvest good yields of the courgette flowers.</p>

<div class="uncode_text_column blog-blogquote" ><p>We marvel at the Petersham’s market gardens. Here in Aotearoa, we all know deep down that we will have to transition away from intensive beef, lamb and dairy farming one day, and likely sooner rather than later, and without the luxury of time for the most detailed debate on the ‘hows’ and ‘whys’.</p>
<p>As I gaze out of the windows I think that a transition into a market garden society may work well for us. We will continue to produce from our fertile earth and there is no reason why export cannot continue to flourish in such a culture. And ‘oh boy’ the produce will be so delicious.</p>
<p>In fact, Harry Boglione, the eldest son, has set up an organic and regenerative farm in North Devon. Head sommelier, the effervescent and knowledgeable Raffaele Givanetti opens the Digby Non Vintage Leander Rosé and we are brought Harry’s Haye Farm Lamb with baby gem, mixed beans and mint sauce.</p>
<p>Now this really is quintessential English fare at its very best. The afternoon ambles into early dusk and for a few hours we enjoy life through the wrong end of the telescope.</p>

</div><div class="uncode_text_column blog-blogquote" ><p>The hotel has such an incredible location, resplendent on the north eastern corner of Wynyard Quarter.</p>
<p>Through Onemata’s large windows, the sun glints off the water in diamond shards and I observe the ever bustling activities of the harbour edge… boats, bikes, trams, some people scurrying, others simply sauntering.</p>
<p>All four of the restaurant&#8217;s hearth ovens are fired up. The ovens face regally into the restaurant. These are the secret to Onemata. The ovens are stone enclaves and heat the cavity to 360 degrees celsius — the magic temperature where the air and food dance with each other to create incredible caramelisations and textures, whilst retaining succulence and moisture and with minimum carbon or burn.</p>

<div class="uncode_text_column blog-blogquote" ><p>Chef Rob Hope-Ede is a Kiwi lad of North Shore extraction. He is as local as they come and creativity oozes out of him. A protege of chef maestro Simon Gault, Rob worked for 15 years under Simon’s stewardship at such Auckland institutions as Euro, Jervois Steak House and as head chef at Giraffe. In that time Michelin starred chefs from around the world would come to Auckland and collaborate with Rob in all manner of foodie experiences.</p>
<p>Rob acknowledges that the current evolution of New Zealand food has many influences and, in this manner, is still a young culture. He cites Māori, Polynesian, European, Asian — basically every world cuisine has a sprinkling of influence on current New Zealand kai, and his own creations reflect this also.</p>
<p>The hotel sommelier is Suraj GC. Suraj is passionate about wine, I can testify to that. Hailing from Nepal, he spent his early Kiwi years as head sommelier at Elephant Hill’s restaurant in Hawke&#8217;s Bay. Suraj and Rob dovetail well with each other — they both are creative, empathetic and into their crafts, and it makes for a tremendous experience for their guests. They are also new fathers, both with 15-month-old children.</p>

<p>Enhanced world views come from having worldly experiences. Worldly experiences are those in which we recognise that for all our individuality and uniqueness, the true strength of our species is derived from shared experiences and how these allow us to relate to each other. No person is an island.</p>
<p>Stag’s Leap Wine Cellars is one of the finest wineries on Earth and considered one of the First Growth estates of California.</p>
<p>The winery was founded in 1970 in the heart of Napa Valley by Warren Winiarski. In 1976, a curious artisan wine merchant based in Paris, Stephen Spurrier, was finding that Californian wines were showing remarkable brightness, length, balance and power. He set up a blind tasting and pitted the greatest French wine estates against hitherto unknown Californian wineries.</p>
<p>The 1973 Stag’s Leap S.L.V Cabernet sauvignon blew the field apart, leaving in its wake the likes of 1970 Chateau Mouton Rothshild and Haut-Brion to name just two. Barbara Ensrud of the Wall Street Journal wrote: &#8220;The 1976 Paris tasting, or Judgment of Paris as it became known, had a revolutionary effect, like a vinous shot heard round the world.”</p>
<p>In front of me now I have the 2018 Stag’s Leap Hands of Time cabernet blend. Wow, it&#8217;s drinking beautifully at this moment. Blue fruits, hints of cinnamon and light spice, plush, beautiful velvet tannins, blue/grey slate, power. Chef Rob chooses to pair this with handpicked and marbled scotch fillet from the South Island, brought from the hearth oven with a brandy pepper sauce and caramelised onion in chardonnay vinegar. And cue mic drop.</p>

He took us on one helluva fizzy ride recounting the history of English viticulture, the terroir, and their ethos through to his and his partner’s vision to create a luxury lifestyle brand to rival French Champagne! Crazy you might say… but no! The proof is in the pudding (English pudd in this case) as the accolades and awards continue to come tumbling in for Digby since their very first vintage release in 2013.</p>

<p>Our facility, constructed in collaboration with our warehousing partner Rohlig Logistics in April 2019, houses every single one of our wines (that is over 1,000+ different lines!). We may be considered a smaller bespoke player in the wine distribution biz but this structure shows our immense commitment to our wines, our suppliers and to our clients.</p>
<p>Right from the time our wines leave faraway shores, travelling in refrigerated containers to arriving in our Auckland refrigerated warehouse, then into your glass, Dhall &amp; Nash is dedicated to ensuring every wine arrives in primo condition.</p>

<p>All wine lovers appreciate that wine is a delicate living thing. It can only tolerate a very narrow margin of temperature fluctuations. At higher or at variable temperatures, wine will age faster and not necessarily in the desired way as the process becomes more volatile. To truly showcase our wines as the winemakers intended, storing them at the proper temperature is a no-brainer. There is really no excuse for storing wine poorly – now, at the DN refrigerated warehouse, all wine is stored at a constant 14°C.</p>
<p>Obviously the &#8220;Big Chiller&#8221; has some serious dimensions, being large enough inside to play a bit of “warehouse rugby” &#8211; that is an enormous 5,500m3 which translates into being able to fit in over half a million bottles of delicious vino! Still a bit more space left for future exciting products to be added to our quality portfolio.</p>
<p>We are proud to be NZ’s first wine distributor to house their entire stock in one &#8220;Big Chiller&#8221; ensuring our wines arrive in your glass just as the winemaker expected – now that’s commitment!</p>

By and large, this year’s growing season has been exceptional for most wine regions in NZ. One exception is Central Otago, where, until the last fortnight, has experienced their coldest growing season on record. There are concerns some fruit may not ripen in time before the leaves begin to fall off the vines. The last two weeks have settled in well for Otago, though, and it’s too early to get a read on the wines yet. My hunch would be that this cool, long, growing season could present a challenge that many of the talented winemakers of the region are up for and are accustomed to from time spent making great Pinot Noir in cooler regions across the globe.</p>
<p>On my last visit to the Hawke&#8217;s Bay towards the latter half of March, winemakers were taking a well-deserved break following a Chardonnay pick that began as early as the end of February and carried into most of March across various vineyard blocks, with Chardonnay fruit of fantastic quality. So while the Chardonnays are fermenting, many of the red varieties will be picked in April, a vintage of two halves in the Bay.</p>

<p>I had a quick word with some of the winemakers with Dhall &amp; Nash &#8211; Takaki Okada from Folium Vineyard in Marlborough, who was thankful to even be allowed to be harvesting his fruit. He was picking his first parcel of Sauvignon Blanc this year.</p>

<p>Takahiro Koyama from Mountford Estate in Waipara is so happy with the wines thus far that he has guaranteed this vintage will be outstanding. It hasn’t been without its challenges though, as due to the current Covid-19 lock-down, their grape pickers were not available and it was all hands on deck to harvest the last 20% of their fruit, all by hand.</p>

<p>Dennis Marshall of Hawkshead Wines in Central Otago is feeling confident his bunches will ripen from the superb weather of late, especially so as the vines age, they appear not to be so susceptible to climate variations.</p>

<p>Jean-Jacques is French. Say no more! His passion for wine and hospitality combined with his indomitable personality make JJ a tour de force! Jean-Jacques has owned or been involved in the Auckland Restaurant scene for several decades.</p>
<p>We sat down with JJ to ask him the burning question…</p>

<p>&#8220;I rediscovered this Merlot last week. I did enjoy it before, but I guess a little more maturity has helped its development!</p>
<p>For me, Columbia Crest is producing far more interesting wines than many Californian wineries. All of their wines, despite their complexity and their richness, are just so easy and enjoyable to drink, that you always want more. In my mind, California Wines are to Washington State Wines what Central Otago Wines are to Martinborough: good but not extremely exciting or interesting.<br />
Columbia Crest could become our winery of the year 2020!!!</p>
<p>The Estate is situated in Washington State. The weather is highly favourable for the growing of this Merlot grape. A warm spring &amp; summer and mild autumn &amp; winter brought the ripening of this grape to perfection. The 2015 vintage was aged in a combination of French &amp; American oak barrels, 50/50 for 18 months. The complex combination of the dark cherries and a chocolatey, soft finish makes it a perfect food match with duck, venison, hanged &amp; aged meats, Roquefort or any robust creamy cheese. 10/10 from me!&#8221;</p>

</em></strong>&#8220;Now I understand why Washington is renowned for Merlot! This gorgeously rich and layered Merlot is so flavourful and interesting that even Miles in the movie Sideways would relent. It&#8217;s a merlot for cabernet drinkers in it&#8217;s power and concentration yet it&#8217;s still smooth and supple on the palate.&#8221;<br />

<p>Wayne brings with him extensive experience in logistics, inventory, and process management. The majority of his career has been spent with a multi-national organisation with additional experience in fine wine retailing and sales support. Wayne is a knowledgeable and passionate consumer and collector of fine wines from all over the world.</p>

<p>&#8220;This wine is 100% Chardonnay, on lees for 2 years, hand riddled and disgorged with no dosage. Made with ripe fruit which fills out the texture with balancing acidity, rounding out the structure. Apple, citrus and minerality from the limestone soils followed by yeasty brioche aromas and flavours from the bottle fermentation. Hand labelled and individually numbered. Ex winemaker from Church Road Winery, Tony Prichard has created a truly artisanal winery focused on producing wines of elegance, texture and balance.</p>

<p>Shana keeps the Dhall &amp; Nash cogs turning smoothly. A lot happens in the background for us to run as efficiently as we do and Shana is the driving force behind this. With a background in media and marketing, Shana knows how to organise, plan and liaise with the team and the customers to keep everyone happy.</p>
<p>We sat down with Shana to ask her the burning question…</p>

<p>Winemaker Takaki Okada takes detailed care of the vineyard, with help from his team of sheep, goats and chickens, before hand harvesting the grapes at optimum ripeness to carefully craft into a consistently excellent wine. Delicious paired with some fresh goats cheese or feta.&#8221;</p>
