In the lead up to our event with none other than the founder and inventor of the revolutionary CORAVIN™ preservation system – Greg Lambrecht – we thought we would collate all the information necessary on the systems and wines on show.
Nothing found.
We’ll be demonstrating the Coravin™ preservation system in action and pouring everyone two glasses each of three premium wines (a “triangle tasting”), to compare and contrast: one that’s been opened on the day and one that’s been Coravined in advance…

2019 Marchesi di Barolo Cannubi
- 14.5% alc | 100% Nebbiolo
- Cannubi vineyard enjoys a very special, unique microclimate. For Piedmont and Barolo insiders, the “Cannubi” vineyard is considered one of the greatest cru sites in the Langhe as well as in the world.
- A best selection of the harvest is selectively de-stemmed and delicately pressed. Controlled temperature: a range of 24-26°C. Maceration of 15-18 days
- Concrete tanks vitrified, before continuing maturation in wood. Evolution lasts about two years. During the first year the wine matures in small French oak barrels. The second year the wine ages in large Slavonian oak barrels. This is followed by at least 1 year of rest in the bottle
94 Points, James Suckling: Beautiful perfumes and fresh flowers come out of the glass with undertones of sandalwood. It’s medium- to full-bodied with fine tannins and a polished and seductive finish.
93 Points, Jeb Dunnuck: Deep ruby red-hued, the 2019 Barolo Cannubi is ripe and inviting on the nose, with notes of black raspberry preserve, sweet lavender, balsamic herbs, and crushed rosemary. It retains nice freshness on the palate and offers similar velvety tannins and an even freshness of acidity. A clean red with good length, I really like where this is now. Drink 2024-2034.

2008 Billecart-Salmon Cuvée Nicolas François Brut
- 12.5%Alc.
- 17% vinified in oak barrels. Partial malolactic fermentation.
- Aging on lees: 10 years.
- 60% Pinot Noir (sourced from Aÿ, Mareuil and Verzenay) and 40% Chardonnay (from Mesnil, Chouilly and Cramant)
- The Cuvée Nicolas François Billecart 1959 was chosen “Champagne of the Millennium” in 1999 by a panel of experts in Stockholm conducting a blind tasting.
100 Points, Tyson Stelzer: Long have I anticipated Nicolas François Billecart 2008 and my first encounter came with Antoine Roland-Billecart in the dining room of the house in Mareuil-sur-Aÿ. I spent a full 20 minutes riveted by its evolution in the glass, moving me to tears. The profound precision and intricate, molecular detail that defines Billecart is transported to a higher level of fidelity in 2008, illuminating a brilliant display of fine chalk minerality of the highest proportions. A saline chalk core erupts from its depths, framing the most pure lemon fruit and strawberry hull; emphatically, unrelentingly and sublimely primary, without even the slightest movement toward evolution. In time, pinot steps forward in the most gloriously pure red cherry fruits. Even 17 months post-disgorgement, it is still intricately, tightly coiled, with an undeterred line and unrelenting persistence; a high-tensile spring of taut, pure energy that screams out for a lifetime to uncoil. This is an NFB with sixty years of glorious life stretching before it, and strictly must not to be approached for at least another decade yet.
20+/20 Points, Matthew Jukes: “I have never before taken an overseas trip to taste one wine, but something told me that this was a flight worth boarding… This super-deep wine dwells low in the glass with weight and depth of delivery that is completely unhurried. Vinous, powerful and with a full spectrum of fruit and patisserie, it is remarkable just how little citrus and herb there is on the front end of this staggeringly impressive wine. It is more layered and exotic than any current release Champagne I can think of, and then when it seems as though the scene is set, everything changes instantly. The palate drops about three gears revealing arresting zestiness and tanginess that completely engulfs the senses. I learned that this cuvée’s release was delayed by nearly two years because the back end was so twitchy, nervy and excitable. As it turns out, the Billecart gurus made the right call here – this is an electrifying wine, and the finish shows that the potential here is incredible. I am lucky enough to have tasted the 1959 and the 1961 Billecart-Salmon vintage wines, among others, and the DNA and detail in this 2008 are near-identical. While the top half of this wine is showy, flamboyant and seductive, the lower half is firm, chiselled, rigid and breath-taking. But that was not all. I mentioned above that this launch took place at Mirazur, previously voted the finest restaurant in the world, and so over lunch, orchestrated by Mauro Colagreco and his brigade, Billy CEO Mathieu Roland-Billecart opened magnums of 08NF, which were cork-capped during their ageing as opposed to crown-capped, like the bottles. They were even more exotic on the nose and even more nipped in on the palate (a canny buy for patient folk).”
Opened with Coravin Sparkling Preservation System

Whether it’s Champagne, Prosecco, or Cava, this system perfectly maintains the crisp flavor and signature bubbles for at least four weeks. Each glass will taste as fresh and vibrant as the first – whether you revisit the bottle tomorrow or a month later.

2021 Flowers Sonoma Coast Chardonnay
- 13.5% Alc.
- Whole cluster bladder press; 100% native yeast on lees; native malolactic in barrel
- Matured in 100% French Oak, 18% new; 228L; Aged 10 months in barrel, no battonage.
94 Points, Wine & Spirits: “Oak plays a structural role in this chardonnay, framing the wine’s white plum and litchi richness in an edge of nutmeg spice. The fruit in the middle of the frame is soft, the edges savory, with leesy bitterness that holds a scent of white flowers. Intriguing and integrated.”
93 Points, James Suckling: “A linear and tight white with sliced lemon and green apple, as well as hints of honeysuckle. Medium body with a creamy texture and a salty, jasmine undertone to the fruit at the finish.”
