It’s a slow and extremely deliberate process, as we don’t want to hitch our wagon to any distillery. What we’ve come to realise in our spirits research, was that the ‘new’ spirits boom has seen consumers moving away from commercial, high-production labels and towards small batch and producers. </span></p>
<p><span style="font-weight: 400;">This has been partly driven by the “craft” movement, which saw the rise of coffee roasteries, craft beer breweries, natural wines, and farmers’ markets. The focus now being on artisanal products, with people valuing authentically produced products, where they can see and get to know the individuals making these products.</span></p>

				</div></div></div></div></div><div class="uncode_text_column" ><p><span style="font-weight: 400;">They started by telling us where Coyotero came from, “We wanted a name that sounds Mexican… People that live in Mexico or Latin America go to the USA and Canada and normally they use ‘Coyoteros’ if you go illegal. It’s like slang, “who takes me? That Coyotero”, it’s a guy that crosses you. We wanted for our people, anywhere, to identify with the brand.” Roberto told us. </span></p>
</div><div class="uncode_text_column" ><p><span style="font-weight: 400;">Daniel agreed, but added “There is the Coyotero and the legend but for me, it was more important&#8230; the people. Their goals… It’s like a warrior, you know. It has a lot of meanings.”</span></p>
<p><span style="font-weight: 400;">The Ancestral company uses a slogan on all their bottlings &#8211; “Fury, Pain and Sorrow.”</span></p>
<p><span style="font-weight: 400;">“It’s part of the brand that goes with everybody…” Roberto explains, “Fury, pain or sorrow and well… I like this idea and I think a lot of people have some fury, pain or sorrow. And it’s easy for a lot of people and other countries to say Coyotero and they identify it with Mexico.”</span></p>
<p><span style="font-weight: 400;">They’re also particularly proud of their location. “There’s six or seven states in Mexico that can do Mezcal, but the most famous state is Oaxaca and from Oaxaca, the most famous area or part or region is Ejutla, so we’re in the best region.”</span></p>

				</div></div></div></div></div><div class="uncode_text_column" ><p><span style="font-weight: 400;">Mezcal is a mexican Agave spirit, made from the ‘pineapples’ or ‘piña’ of the Agave plant. </span></p>
<p><span style="font-weight: 400;">Once the Agave plant reaches maturity, it’s harvested and cooked in a stone oven underground. This imparts a very unique and distinctive smoky flavour. The name ‘Mezcal’ actually comes from the Nahuatl word &#8220;mexcalli,&#8221; meaning &#8220;oven-cooked agave.&#8221; </span></p>
<p><span style="font-weight: 400;">The cooked agave is then ground, and the resulting juice or ‘honey’ is fermented in wooden vats before being distilled.</span></p>

Daniel rushes off camera briefly. He returns with a jar of Agave syrup which he calls the honey, as he opens it close to the camera and drizzles it from a spoon.</span></p>

<p><span style="font-weight: 400;">“It’s more liquid. This honey, I’ve had maybe 6 months. It doesn’t get hard, you know some other honey it gets like, at the bottom it gets a little bit hard like sugar. This, it’s like <em>super</em> natural.” </span></p>

<p><span style="font-weight: 400;">This is the ingredient that they ferment to make the Mezcal, and it’s fascinating to see that they’re obviously using it in their own home as an ingredient in their cooking and mixing.</span></p>
<p><span style="font-weight: 400;">We asked them to clarify how they crush the plants to get the syrup, “Tahona. Donkey or horse, whatever we have over there,” Roberto laughs, “But usually we have a donkey.”</span></p>
</div><div class="uncode_text_column" ><p><span style="font-weight: 400;">A Tahona is a large heavy stone wheel. It’s incredibly labor intensive and slow, so it’s often done with help from four legged friends who turn it to crush the cooked agave pineapples. </span></p>
<p><span style="font-weight: 400;">Agave plants have a long growth period, so some say that mezcal represents “drops of time”.</span></p>

Roberto elaborates (theirs is an evidently practiced and efficient dynamic…)  “Cognac and Brandy you put in a barrel for 20 years or five years or 10 years… For Mezcal it’s the other way. [The maturation] comes from time in the ground, in the land. It has to be a minimum of six years to seven or eight… Other agaves can be 12 to 15 years in land. 				</div></div></div></div></div><div class="uncode_text_column" ><p><span style="font-weight: 400;">To the uninitiated, Mezcal and Tequila can seem similar &#8211; they’re both agave spirits &#8211;  but expressing this to a mezcal person is akin to telling us a kiwi accent sounds the same as an aussie one. You will get schooled very quickly. </span></p>
<p><span style="font-weight: 400;">“It’s not tequila, you know? It’s completely different,” Roberto tells us. “Tequila’s a shot, people want to get drunk, feel the effect in 10 minutes. Mezcal &#8211; I always say it’s like a woman, you have to give little kisses all the time, you treat a woman with little kisses, same with mezcal. Little by little. And it’s an incredible flavour.”</span></p>
<p><span style="font-weight: 400;">Roberto and Daniel bounce off each other, explaining the differences in how you drink Mezcal as opposed to Tequila. It’s wonderful to watch them both talk and pick up where one another doesn’t quite have the English word, and you can see they’re both on the same page. </span></p>
<p><span style="font-weight: 400;">“Mezcal, really it’s another deal. It’s not tequila &#8211; that’s like for beginners. I’ll tell you the truth. Mezcal has some status.” Roberto muses. </span></p>

You know? And then… tequila, it’s like tequila flavor. Everything you mix it with. With tequila you can… how do you say… you want to not show the bad flavor of the tequila. That’s why I said the mixology for the Mezcal is so different because it explodes the flavours.”</span></p>
<p><span style="font-weight: 400;">Putting musings and taste preferences aside, there are actual technical differences between mezcal and tequila.</span></p>
<p><span style="font-weight: 400;">‘Mezcal’ is the term for agave spirits and allows a broader range of production differences than ‘Tequila’ which has stricter regional and inclusionary rules. This is in contrast to some other categories, in that broader doesn’t necessarily mean worse. Often rules and restrictions are put in place to protect the quality and reputation of a product, but mezcal is an ancestral product and the differences in production are its secret weapon, not its weakness. </span></p>
<p><span style="font-weight: 400;">Tequila is </span><i><span style="font-weight: 400;">technically</span></i><span style="font-weight: 400;"> a mezcal since it’s a Mexican agave spirit, but is a very controlled one.</span></p>

<p><span style="font-weight: 400;">“When you mix Mezcal with the foods, like with fish or maybe like a salad… It&#8217;s the same. You have to taste a little bit of the Mezcal, and the meat, it explodes the flavours of the meat. Or maybe you have more fat. When you put this meat with the fat in your mouth then when you taste the mezcal, it explodes more the flavours of the meat </span><i><span style="font-weight: 400;">and</span></i><span style="font-weight: 400;"> the mezcal. That’s why it’s so good to make dinner special with a Mezcal.”</span></p>
<p><span style="font-weight: 400;">“The gastronomic experience, it’s so different. Maybe, like, Serrano Ham. You have some different flavours when you mix strong Mezcal &#8211; Coyotero &#8211; and you taste the Serrano ham, it explodes the flavours of the mezcal. Really, it’s so good. With fish, salads, or special desserts, maybe with chocolate…”</span></p>

Our wine-brains liken its story to Gamay in some ways, wherein it was once considered an ‘inferior’ product but is now carving out its own niche. (We love an underdog tale around here.)</span></p>
<p><span style="font-weight: 400;">For the dataheads, we’ve got some numbers. </span><a href="https://www.fortunebusinessinsights.com/mezcal-market-102652"><span style="font-weight: 400;">Fortune Business Insights</span></a><span style="font-weight: 400;"> states “The global mezcal market size was valued at USD 1,121.73 million in 2024. The market is projected to grow from USD 1,238.95 million in 2025 to USD 2,546.17 million by 2032, exhibiting a CAGR of 10.84% during the forecast period.”</span></p>
<p><span style="font-weight: 400;">While North America dominated the international Mezcal market at just over 75%, the trend has been working its way around the globe internationally. </span></p>

</div><div class="uncode_text_column" ><p><span style="font-weight: 400;">Liza Weisstuch for Club Oenologique states in her article, ‘</span><a href="https://cluboenologique.com/story/the-unstoppable-growth-of-mezcal/"><span style="font-weight: 400;">The Unstoppable Growth of Mezcal</span></a><span style="font-weight: 400;">’. She goes on to explain how it was in 1995 that the first international mezcal attention started when one Ron Cooper started to sell to the USA under his Del Maguey label, highlighting the human element and the personalities that give each expression its character and turning the heads of people seeking more artisanal products.</span></p>
<p><span style="font-weight: 400;">It took a while for the trend to reach us in New Zealand, as is often the case in our wee corner of the world. A lot of people in Auckland were introduced to Mezcal &#8211; or at least, had their Mezcal horizons broadened &#8211; by </span><a href="https://www.metromag.co.nz/food/food-bars/get-a-lesson-in-mezcal-at-new-snickel-lane-bar-la-fuente"><span style="font-weight: 400;">La Fuente</span></a><span style="font-weight: 400;"> by Edmundo Farrera, an Auckland-based restaurateur and sommelier who grew up in Oaxaca. </span></p>

In 2020, </span><a href="https://www.thedenizen.co.nz/gastronomy/ghost-donkey-is-the-new-mezcal-and-tequila-bar-you-need-to-visit/"><span style="font-weight: 400;">Denizen</span></a><span style="font-weight: 400;"> stated “Ghost Donkey is the new mezcal and tequila bar you need to visit!” proving that other establishments were also picking up on consumer interest.</span></p>
<p><span style="font-weight: 400;">In 2023, The Press profiled Aucklander Hayden Bigelow and his partner from Mexico as they embarked on a </span><a href="https://www.thepress.co.nz/business/350010879/small-business-project-nzs-first-mezcal-spirit"><span style="font-weight: 400;">mezcal project</span></a><span style="font-weight: 400;">, noting “we see in the next five years that mezcal and premium agave spirits will be a big category.” (By our calculations, that means it’s happening </span><i><span style="font-weight: 400;">now!</span></i><span style="font-weight: 400;">) </span></p>

<p><span style="font-weight: 400;">La Fuente has since closed in 2024 after a successful 6 years so Edmundo can focus on its sister business venture &#8211; Taco Teca &#8211; but in its wake it left a whole slew of new mezcal fans looking for a way to quench their thirst!</span></p>
<p><span style="font-weight: 400;">In 2024, </span><a href="https://www.drinksbiz.co.nz/news/sf8axvxmmzgfpgxwwfueon6ja7v2fx-c6thw-mklzg-ejga7-6877r-2cjac-386kc-c6fn4-52zwl-pfzax-xh5yp-ryxk4-gwl5d-2d4w4-hfp9t-wbch9-thypt-a5mdc-e7fd8"><span style="font-weight: 400;">DrinksBiz</span></a><span style="font-weight: 400;"> &#8211; a NZ based hospitality publication &#8211; profiled the Mezcal market in the UK through their UK correspondent Sarah Miller, perhaps to give us the heads up that the wave is growing bigger.  “According to CLASS magazine’s 2024 report, tequila is the second-highest-selling spirit in the UK’s best bars, while mezcal (a category that barely existed here 15 years ago) comes in at an impressive sixth… With such a significant increase in visibility and availability, as well as a wide variety of styles and a rich and authentic history to entice and engross consumers, the stage certainly appears set for agave spirits to soar.”</span></p>

</div><div class="clear"></div></div><div class="uncode_text_column" ><p><span style="font-weight: 400;">When one considers who the market is for Mezcal, </span><a href="https://cluboenologique.com/story/the-unstoppable-growth-of-mezcal/"><span style="font-weight: 400;">Club Oenologique</span></a><span style="font-weight: 400;"> has answers, “‘It’s actually whisky drinkers – and to a smaller degree, rum drinkers – rather than Tequila drinkers who are moving into mezcal,’ says Justin Lane Briggs, an agave spirit expert and consultant… ‘People who are into funky Jamaican and Haitian rums make the jump pretty easily. It’s also whisky drinkers looking for the next thing, rather than Scotch drinkers looking to exchange smoke for smoke. It’s bourbon drinkers coming at it from an understanding of small-batch exclusivity.’”</span></p>
<p><span style="font-weight: 400;">But that’s for those who want to imbibe more thoughtfully. While tequila is more the ‘throw it down’ type of spirit, as Roberto &amp; Daniel explained above, there’s no reason to discount mezcal if you don’t class yourself as the refined-sipper type. Cocktails &#8211; especially well-made cocktails by mixologists and creative bartenders &#8211; can really shine with mezcal as they can lean into the earthy, smoky flavours and create something quite special. No chasers needed. </span></p>

				</div></div></div></div></div><div class="uncode_text_column" ><p><span style="font-weight: 400;">For example, “The Oaxaca Old-Fashioned, a smoky twist on the standard, was created in 2007 by New York bartender Phil Ward, who worked at acclaimed cocktail bar Death &amp; Co before opening Mayahuel, his own agave bar. Now it’s a modern standard, known in any watering hole worth its weight in bitters and artisanal ice. As all this has happened, bar managers at many high-end establishments, often destinations for whisky drinkers, have bulked up their inventory with mezcals.</span></p>
<p><span style="font-weight: 400;">Meanwhile, a young generation of chefs is working with bar staff to develop recipes that pair well with different mezcal expressions. At De Mole, a Mexican restaurant in Brooklyn, beverage director Daniel Flores, whose family owns the spot, has created imaginative cocktails involving things like chamomile- and saffron-infused mezcals. But ask him about the spirit, and he speaks enthusiastically about the mezcal-infused smoked salmon.”</span></p>

These pre-mixed cocktails have been concocted by Dave Horan &#8211; a mixologist who settled in Auckland after working in cocktail bars in Dublin, Sydney, Melbourne, London, Wellington and Auckland.</p>
<p>Good Spirits is a two pronged affair &#8211; a cocktail event service where Dave comes to customers and makes custom cocktails on-site, and a pre-mixed range of four brilliant, premium, bar-ready cocktails that we’re thrilled to now be distributing New Zealand wide!</p>

<p><span style="font-weight: 400;">For a while, kiwis weren’t totally sold on the difference between them &#8211; but in the last few years (perhaps accelerated by lockdowns) our collective eyes, palates and horizons have been opened to the convenience, potential and in some cases (like Good Spirits) the undeniable tastiness that </span><span style="font-weight: 400;">premium</span><span style="font-weight: 400;"> pre-made cocktails offer.</span></p>

				</div></div></div></div></div><div class="uncode_text_column" ><p><span style="font-weight: 400;">Just last month, </span><a href="https://www.drinksbiz.co.nz/news/draught-cocktails-on-the-rise-in-nz-on-premise"><span style="font-weight: 400;">DrinksBiz</span></a><span style="font-weight: 400;"> &#8211; the leading on-premise beverage publication in NZ &#8211; published a piece detailing the rise of these top-shelf worthy pre-mixes in the trade. Analysing data from CGA by NIQ’s February New Zealand On Premise Pulse+ Report, they explain </span><i><span style="font-weight: 400;">“The report confirms a robust awareness of draught/tap cocktails and mixed drinks among New Zealand consumers, with more than a third noticing these offerings when eating and drinking out.”</span></i></p>
<p><span style="font-weight: 400;">Concerns are raised about consumers&#8217; perception of pre-made drinks, with a preference for cocktails being  freshly mixed BUT the report also found that a whopping </span><b>42%</b><span style="font-weight: 400;"> of consumers surveyed are warming to the trend as the </span><b>quality</b><span style="font-weight: 400;"> of these solutions improve. Quality like that found in craft beverages such as Good Spirits are quite literally shaping the end-consumers tastes. </span></p>
<p><a href="https://www.theshout.co.nz/seven-big-drinks-trends-in-the-on-and-off-premise/"><span style="font-weight: 400;">The Shout NZ</span></a><span style="font-weight: 400;"> also analysed data in 2024, and found that despite a more money-conscious shift across the board leading to people looking to stay home a little more, it doesn’t mean death for cocktails; </span><i><span style="font-weight: 400;">“Half (50%) of 18 to 24-year-olds told CGA’s OPUS that they typically choose cocktails when out – which means the category has a wider appeal than beer (33%) or wine (25%).”</span></i></p>
<p><span style="font-weight: 400;">So from a popularity standpoint, they’re great. But what about the bottom line? </span><a href="https://www.theshout.co.nz/industry-survey-confirms-cocktails-are-the-way-of-the-future/"><span style="font-weight: 400;">The Shout NZ</span></a><span style="font-weight: 400;"> also spoke to Chief Executive of Spirits NZ, Robert Brewer about the landscape. </span></p>
<p><i><span style="font-weight: 400;">“Kiwi consumers are now drinking less but are more discerning with their spend…” Brewer says this has created an opportunity for venues to adapt to changed consumer demand, for example; by offering a larger range of cocktails.“Not only are they becoming increasingly popular but are also higher value and higher profit than many other alcoholic drinks… The average cocktail sits about 50% higher from a price point perspective, sells with an 8% higher margin, and makes 68% higher gross profit… In dollar terms, this means you’ll be making about $5.50 more gross profit per cocktail compared with other drink categories.”</span></i></p>
<p><i><span style="font-weight: 400;">Despite consumer spending habits changing, their tastes appear to be more consistent, with the respondents reporting that the </span></i><b><i>Espresso Martini is the most popular cocktail they serve</i></b><i><span style="font-weight: 400;"> – both in 2023 and at the same time last year.</span></i></p>
<p><i><span style="font-weight: 400;">The </span></i><b><i>Margarita</i></b> <b><i>comes in second</i></b><i><span style="font-weight: 400;"> in 2023, replacing the Mojito which was runner-up in 2022.”</span></i></p>
<p><span style="font-weight: 400;">For establishments that didn’t want to offer cocktails &#8211; around 10% of those surveyed in the data that The Shout analysed &#8211; time and staff experience was cited as the biggest barrier.</span></p>

<p><a href="https://inthemixbyimi.com/2024/06/the-rising-trend-of-ready-to-drink-cocktails/"><span style="font-weight: 400;">In The Mix</span></a><span style="font-weight: 400;">, another reputable drinks authority reporting on market data but from the US, explains </span><i><span style="font-weight: 400;">“The ready-to-drink (RTD) cocktail market is experiencing a dynamic transformation, becoming a significant player in the beverage and hospitality arena…”</span></i><span style="font-weight: 400;"> They go on to list which high-end venues are incorporating pre-made cocktails into their premium bars, restaurants and guest spaces. These include The Marriott, Kimpton, Hyatt and Hilton hotels. </span></p>
<p><span style="font-weight: 400;">Their data may be from the US, but consumer trends always trickle down to little ol’ NZ down here eventually, and we believe this shift is starting to happen. With a brand like Good Spirits, this presents a fantastic opportunity for our on-premise establishments to offer convenient, high-quality cocktails consistently. </span></p>

<p><span style="font-weight: 400;">The region is noted as the homeland of both Syrah and Viognier, as well as other natives such as Grenache, Mourvedre, Cinsault and perhaps most importantly, Dhall &amp; Nash’s own Jean-Jacques Bourvis. The Rhône Valley is also renowned as a gastronomic destination within Europe, so to have a world class wine region right on their doorstep is as convenient as it is serendipitous. </span></p>

Only Bordeaux has more hectares planted with vines. The entire region is about 44,000 hectares with 31,926 hectares under vine. Producing over 400 million litres of wine in the region annually. Translating to close to 200 Million dollars’ worth of wine being produced here every year.</span></p>
<p><span class="font-502675">Although we often talk about the wines of the Rhône Valley as a single entity, the Northern and Southern regions are very different. The immensity of this celebrated wine region in reality, has meant it has always been divided both geographically and stylistically. The North is separated from the South by a 30-kilometre stretch from Valence to Montelimar of green lush countryside where there are no vines at all.</span></p>
<p><span class="font-502675">Not only is the North (known as ‘septrionale’ in French) much smaller and more densely planted than the South, but also its climate is continental, hot summers and very cold winters. Northern Rhône is also deeply terroir-driven which could be seen as a natural extension of Burgundian philosophies and so is largely responsible for the most prestigious crus meanwhile the south (with some exceptions) is most important in terms of volume.</span></p>

The 45th parallel is a latitudinal ‘line’ around the planet, 45 degrees north of the Equator. It’s significant as it runs through a number of renowned wine regions including Burgundy, Piedmont and Oregon and also runs two kilometres from the domaine&#8217;s cellars.</span></p>
<p><span class="font-502675" style="font-weight: 400;">Paul Jaboulet Aîne is a storied producer dating back nearly two centuries. It was established by Antoine Jaboulet and is now run by the wine-famous Frey family. When the family acquired Paul Jaboulet Ainé in 2006, Caroline Frey took up the role of winemaker and viticulturist there. Caroline is fast becoming one of the top winemakers in France, admired for her persistence for quality. Under her leadership, the Paul Jaboulet Ainé vineyards were certified for Sustainable Farming and she now follows organic and biodynamic practices. In initiating this, Caroline also wanted to extend this philosophy to their CdR wines. “The hot and dry climate of the Côtes du Rhône and the Mistral are ideal for organic viticulture. Partnerships have been forged with carefully selected winegrowers to draw up a harmonious blending true to Parallèle 45’ origins,” she explains.</span></p>
<p><span class="font-502675" style="font-weight: 400;">Paul Jaboulet Aîné owns the famed La Chapelle Vineyard. An icon, the chapel, after which it is named, was built in 1235 and sits at the top of the hill. It is small and simple, yet one of the most powerful images in the world of wine. The region Hermitage is so called after the hermit that used to live there alone on the hill.</span></p>

With its distinctive label, unchanged since it was designed in 1928 and undisputed quality, it is recognised by wine writers and wine lovers from all over the world and is a true testament to the quality this house is known for.</span></p>
<p><span class="font-502675" style="font-weight: 400;">Their Héritages range is their more accessible line, offering supremely easy drinkability and accessibility. An established brand for 20 years, it draws back to the Ogier heritage and is a reflection of the house&#8217;s know-how. The wines in the Héritages collection are based on long-term partnerships with winegrowers spread over all the Rhône Valley crus. Every year, they organise a blind tasting of all the partners&#8217; wines, with the growers and partners invited to join, taste and grade the wines with them, so they are included in all aspects of the process, and it’s very collaborative but closely overseen by Ogier, with quality being of utmost importance.</span></p>

In fact, when opening the Wynyard location, Chef Luis decided to do something potentially crazy… he was only going to offer Margaritas on the cocktail list.</span></p>

(dun dun…) We all know how tough this period was for hospitality, followed up by significant staff shortages across the whole sector… Chef Luis got in touch with his regulars and asked what he can offer in the absence of a fully functioning premises. “Margaritas!” was their resounding answer. They told Luis that while they missed his delightful ceviche and food, they were missing his signature margaritas even more. And so, an idea began to form…</span></p>
<p><span class="font-502675">Luis started preparing his margaritas but didn’t have a license to sell alcohol off-premises, so to get them safely delivered to his loyal fanbase, he partnered with a liquor shop in Wynyard Quarter who sold it on his behalf, and from there it snowballed. They told friends, and friends told friends, and eventually, Besos Latinos closed its doors to make way for Besos Margaritas!</span></p>

<p><span class="font-502675">Difford’s Guide has a fantastic account of the known history <a href="https://www.diffordsguide.com/g/1138/margarita-cocktail/origins-and-history">here</a> &#8211; following it’s evolution from ‘The Tequila Daisy’ to the ‘Picador’ and ‘Tequila Sour’ through to the ‘Margarita’s first known mention by name in the 1950’s, as well as detailing some of the claimed creators and pioneers.</span></p>
<p><span class="font-502675">Regardless of knowing the truth behind the origin of this delightful cocktail, the Margarita continues to be one of the world’s most popular cocktails. And whilst it is a drink that needs no introduction in 2020 the Margarita reached new heights, proving to be pandemic-proof and remarkably resilient. Particularly, it seems for Luis in Auckland.</span></p>
<p><span class="font-502675">According to the IWSR, whilst sales of Tequila and cordials (which include liqueurs) surged by 66.5% and 44.6% in growth that year the trend of “Home Mixology” and convenience cannot be overlooked.</span></p>
<p><span class="font-502675">“The 10-litre batches became 30 litres, then 40, and then 200 litres a week, as demand exploded among customers stuck at home during lockdown… I applied for the licence and registration and then it reached a point where I was pretty much ordering all the Patron tequila that was available,” recalls Cabrera, “and I was struggling to find it. Suppliers were surprised that I was buying such an amount of tequila during Covid!”</span></p>

<p><span class="font-502675">Earlier this year, The Post (formerly known as The Dominion Post’) released an article that appears at first to make a bold claim; that <a href="https://www.thepost.co.nz/food-drink/350157990/why-auckland-sells-better-margaritas-mexico-city">NZ serves better margaritas than Mexico City.</a></span></p>
<p><span class="font-502675">Less controversial than it perhaps first appears, Luis is profiled and explains that in Mexico, Margaritas actually aren’t that popular. “If you want tequila in Mexico, you drink just tequila. You don’t do anything with it.”</span></p>
<p><span class="font-502675">But after settling in NZ and opening restaurants specializing in Mexican cuisine, he was somewhat surprised at the repeated requests for Margaritas, but was all too happy to delve into the welcome challenge of creating the best darn Margarita they could possibly have, and then keep making it again and again and again. His quest for perfection and consistency has made him the Margarita King of Auckland (and soon to be NZ!)</span></p>

<p><span class="font-502675">“Chief Executive of Spirits NZ, Robert Brewer, says the survey of bar and restaurant owners across New Zealand, provides evidence that consumer habits have changed post-COVID, and with the increasing cost of living; “Kiwi consumers are now drinking less but are more discerning with their spend and are drinking better,” he says. “Where a patron may have previously had three averagely-priced drinks on an evening out, the trend is that they are instead choosing to savour one high quality cocktail.”</span></p>
<p><span class="font-502675">“Despite consumer spending habits changing, their tastes appear to be more consistent, with the respondents reporting that the Espresso Martini is the most popular cocktail they serve – both in 2023 and at the same time last year. The Margarita comes in second in 2023, replacing the Mojito which was runner-up in 2022.”</span></p>

That infamous bottle of gold labeled liquid could be passed around a table like a torch, each person reliving those not so fond memories. How can this experience be so similar for so many people? And how is it that we’ve come to love and enjoy the good Tequila the way we do now?</span></p>
<p><span class="font-502675">Our answer lies in a simple distinction between two categories: Tequila Mixtos and 100% Blue Agave Tequila. Choosing products with the latter on the label is the number one rule in quality Tequila selection. Selecting anything missing this label, may send you back to those not-so-good ol’ days.</span></p>
<p><span class="font-502675">Tequilas that say ‘100% Blue Agave’ on the label are spirits made from just that, 100% Blue Agave. Tequila Mixtos on the other hand, are only required to be made from 51% Blue Agave sugars, and the other 49% can be made from any other kind of sugar.</span></p>
<p><span class="font-502675">Doesn’t sound too bad when we say it that way but let’s break it down a little bit further and see why we really want to stay away from those Mixtos tequilas.</span></p>

Mixing alcohol has generally been accepted as a bad idea and with Mixtos tequilas, it happens right away, in every single drink that you consume. In addition to the sugary mixers they are usually paired with, you’re teeing yourself up for a bad time.</span></p>

Most 100% Agave brands say “absolutely not” to this allowance, instead relying on quality of agave, process, and barrels when aged. Mixtos, on the other hand, use them as a crutch to hide the defects in the production process and less than desired flavors. These additional sugars, artificial flavors, and chemicals make your body feel just like they do in any other product: not so hot.</span></p>
<p><span class="font-502675"><strong>The lesson: Keep it pure</strong></span></p>
<p><span class="font-502675">Just as we want to keep our food local, unprocessed, and of the highest quality, the same applies to beverages. The best tequilas are made from just agave and water.”</span></p>

<li>Combine the peels of 8 Tangelo with 100g sugar, and rest overnight.</li>
<li>Next day, add 275ml fresh Tangelo juice, 2g citric acid &amp; 1g malic acid, alongside 20g of chopped Tarragon.</li>

Fortified to 22% abv with grain-based spirit, approx. 15-18 g/L residual sugar. Kerikeri Lemon, Kumarahou, Kawakawa, Tarata, Pink Peppercorn, Manuka and Kanuka Flowers foraged by hand by owner, Jake and his son Remy. Botanicals macerated in alcohol, then distilled through rotary evaporation and added back to base wine at fortification.</p>
