Cilantro Infusion

with Mezcal Coyotero

Ingredients
  • 1½ oz Mezcal Coyotero
  • 1½ oz pineapple juice
  • A dash of lime juice
  • 1 oz simple syrup
  • A handful of fresh cilantro
  • Top of sparkling water

  • Glassware: Old Fashioned glass (12 oz)
  • Technique: Shake and light muddle
  • Garnish: Small bunch of fresh cilantro
  • Rim: Agave worm salt (traditional Oaxacan seasoning)
Preparation:
  1. In the shaker tin, add a handful of cilantro and muddle gently to release aroma.
  2. Add a scoop of ice (about 5–6 cubes).
  3. Pour in Mezcal Coyotero, pineapple juice, lime juice, and simple syrup.
  4. Shake vigorously for 30 seconds.
  5. Rim an Old Fashioned glass with Agave worm salt.
  6. Strain and serve.
  7. Finish with a splash of sparkling water.
  8. Garnish with a small bunch of fresh cilantro.
